We had a lot of drama, which is the opposite of what you want to happen with a newborn. Basically, our nanny quit on her first day on the job. I’m not sure if it reflects poorly on me or her (hint: she did it, I’m pretty much the best boss EVER), but it happened. Truly.
Luckily, my mother-in-law was able to stay with us the last few weeks while we found/hired/get used to a new babysitter, but the whole process took a long time to get back into the routine. Work. which in turn took me longer to get back into the blogging routine. Luckily my little girl seems to be a lot more flexible than me as she has been her usual happy self through it all and yesterday she even decided to do her first tummy roll!

On the one hand, I’m flattered that she thinks my breasts are the ULTIMATE food source, but on the other, I’m happy that she’s finally figured out that breast milk tastes the same when it’s in a bottle, because that means I can work a a while without having to worry about him coming home to go on hunger strike until I’m there.

Prep Tip: You can make this recipe in about 15-20 minutes without any prep, depending on your slicing skills, but you can definitely cut the veggies ahead of time if you’re short on time!

Prep Tip: The vegetables can be sautéed and the tofu ricotta can be assembled (and refrigerated) ahead of time. This week’s plant-based meal plan includes family-friendly vegan recipes for breakfast, lunch, and dinner. My kids want to help with the cooking lately. I let them prepare most of the breakfast and lunch and help with dinner a couple of times a week.
We haven’t cooked much this week because we’re home most of the time. No take-out necessary. I find meal prep helpful when working from home because it helps you actually eat lunch and not spend too much of your lunch break doing stuff.

This week I made a double batch of instant crock pot chopped oats. If you’ve never seen it, you can check out my Instagram Highlight where I’ll explain.
We also have bagels or toast with peanut butter and fruit and lots of smoothie ingredients. One of my kids asked for chocolate chip muffins, so those will be coming soon.
We usually eat leftovers for lunch. Since we adults work, the children usually prepare their own lunch. They like peanut butter toast, cereal, oatmeal, beans and chips or other snacks. Sometimes they will have salad or leftovers.
Healthy Vegetarian Meal Plan
If I don’t have any more, I’ll make a big salad. I already have all the products washed and ready, I just need to reduce the ingredients for the dish. Leftover soup is one of my favorites because it’s easy to reheat and I can eat it quickly, unlike a salad that takes a long time to digest.
Monday: A hearty vegetable soup is an all-around favorite! I have all the ingredients I need for this recipe and we love it. I couldn’t find potatoes at the store, but I have a large baked potato that will do.
Tuesday: Spaghetti with vegetables and a nice side salad will be a great way to consume lots of vegetables. It’s also versatile, so if I don’t find something I normally use, I leave it out. Don’t forget the salad dressing!
